[content] => For many, Hoi An is the jewel in Vietnam's crown. It is a heady mix of cobbled streets, small tailor shops, trinket vendors, riverside cafes, galleries, traditional merchant houses and incense-infused temples. Hoi An was one of Southeast Asia's major trading centres during the 16th century and the town's development was affected by a multitude of outside influences, the most significant of which being the Chinese merchants who settled here. To this day, Hoi An has a distinctly Chinese feel to it. However, it was the Japanese who built the curious bridge (Chùa cầu), which is the only known covered bridge with a Buddhist pagoda attached to one side.
In the late nineteenth century Hoi An's Thu Bon River silted up making it impassable for commercial shipping. The port moved to Tourane - now the city of Danang - and Hoi An languished. Its retreat into small town anonymity meant that its old buildings survived the joint ravages of war and development, when so many other towns in Vietnam were destroyed. In 1999, the old town was declared a World Heritage Site by UNESCO and today the ancient centre is pedestrianised, making it the most convivial place to spend several days soaking up a traditional Vietnamese vibe.
This is a town in which to take time out and enjoy 'slow time' - eat, walk, cycle, shop and simply explore. To add to the ambiance, as darkness falls all electricity is switched off and the town begins to glow, illuminated by hundreds of beautiful traditional silk lanterns. You can choose to stay either in the old town itself or just outside on the beach at Cua Dai, which is as good as any in Central Vietnam.

[content] => The Con Dao consist of 16 mountainous islands (and islets) off the southern coast of Vietnam, with an indigenous population of only approximately 5,000 people.
For most of the twentieth century a trip to the Con Dao Archipelago meant incarceration in Indochina's most brutal political prison. For both the French and the US backed South Vietnamese regimes, Con Dao's main island, Con Son, was a dumping ground for Vietnam's most feared nationalists and communists. In 1984 the islands were given protected status and became Con Dao National Park and endangered species are now protected within the park, including the hawksbill turtle, the green turtle and the dugong. There are also rare ecosystems to preserve such as sea grass meadows, mangrove forests and coral reefs. However, the key to Con Dao's newfound popularity are the simply amazing beaches. They are the best in Vietnam ... and by some margin. Add to this lush forests, a diverse eco-system and the quaint quiet streets with a heavy historical backdrop - then the case for including Con Dao on your itinerary becomes compelling.

[content] => At the southernmost point of Vietnam are "the green lungs of the Mekong" - a flat and fertile region, criss-crossed by miles of canals and rivers. These "lungs" are responsible for producing vast quantities of rice, fruit and vegetables, much of which ends up in the Mekong Delta's bustling floating markets. As you would expect, life revolves around the waterways which are flanked by green expanses of paddy fields, thick orchards of longan, coconut and mango trees, dense forests and one or two small white-sand beaches.
In proximity order from Saigon, My Tho and then Vinh Long are closest and, therefore, are the starting points for most cruises. Can Tho, the Mekong Delta's largest city, has some of the larger floating markets close by. In the far west, close to the Cambodian border, sits Chau Doc, where many people actually live and work on the water as the Mekong River is particularly wide here before it divides in to many channels.
The Mekong Delta makes for a great escape from urban Saigon and to spend time cruising through its many veins affords time to relax. The Delta can be visited on a day excursion from Saigon, but most travellers prefer to spend several days delving deeper. It is also possible to travel from Saigon all the way to the temples of Angkor in Cambodia, using the Mekong River as your gateway.

[content] => Vietnam's largest island sits just over 10 miles off the Cambodian coast. Indeed, Cambodia has made claims over Phu Quoc Island based on this territorial proximity, as the residents of Kep (Cambodia) look jealously across at Phu Quoc's pristine beaches. However, Vietnam's presence on the island is well established and dates back for centuries.
Almost 70% of the island is designated as National Park and, notwithstanding some building in Duong Dong town over recent years, Phu Quoc offers white sand beaches, great diving, and, in the interior, an abundance of lush green and bubbling streams. It is also one of the very few places in Vietnam where you can enjoy the sun setting over the sea.
Accommodation has improved markedly, though restaurant and nightlife options remain limited – perhaps now just about broad enough to cover most tastes. Phu Quoc is a delightfully mellow, restful tropical experience - perfect as a book-end on your travels. Be quick though....the island is likely to be set for some heavy development over coming years.
Vietnam Airlines has direct flights to Phu Quoc from Saigon and the Mekong Delta town of Rach Gia. The flight from Saigon takes about an hour. There's also a three-hour-long ferry ride from Rach Gia.

[content] => Officially named 'Ho Chi Minh City' yet still known to locals as 'Saigon', this flourishing city is a true economic powerhouse. It has more in common with nearby Bangkok than its sedate compatriot Hanoi, which lies over 1,000 miles to the north. Indeed, Saigon is the larger of the two cities, with a population thought to be around 8 million, though it's hard to imagine how a census can be taken amidst the chaos. It's a youthful city that oozes such an energy and optimism that even the Vietnamese can't resist the draw of its streets - Saigon is packed with émigrés from all over the country, including a large number from the proud northern capital.
Saigon has spent most of its history in a state of constant turmoil; French colonials, Japanese invaders and the American-sponsored anti-communist regime all had their time here before Ho Chi Minh's forces took over in 1975 and renamed the city in his honour. Then, during a period of strict 'corrective' communist measures, there was famine and a massive outflow of boat people until a belated decision in the late 80's saw market forces embraced. Saigon has not looked back.
The French legacy is certainly still evident in several key colonial buildings, but whilst Saigon may have been known as the 'Paris of the East' in the 60s, these days it's a bit of an architectural shambles. Juggling past with the present is what makes Saigon such a uniquely compelling place for the visitor. After you recover from the initial shock of Saigon's frantic street life, it's easy to be swept up in the infectious positive energy. Exploring the history, the food, the shopping and gazing at the constant activity will easily keep you busy for several days in the Vietnamese capital-in-all-but-name.

[content] => Mui Ne is a peninsula, on which you find Phan Thiet town and several remarkable beaches. It may not yet rank as one of Asia's most famous resorts, but the fine stretches of white-sand compare favourably with the best in Phuket and Bali. Recent development has been mostly low rise and, consequently, there are some excellent resorts and restaurants dotted along the coast. It's a perfectly agreeable spot for several days relaxation.
In the early 1990s there wasn't a single development on Mui Ne beach – it was merely a small fishing enclave and the beaches were bereft of everything but palm trees. However, by the mid-90s it was 'discovered' by beach starved Saigon expats, who started making regular weekend pilgrimages to a handful of low-key resorts. Nowadays, it is still popular with these sun-seeking expats, as well as kite surfers and, most notably, local Vietnamese looking for a beach within striking distance of Saigon.
This is where the fabled round wicker-basket boats originate. How fishermen manage to get to sea - and back - in these contraptions with a single paddle, God only knows. Equally strange are the soaring sand dunes - the view from the summit of each is amazing, as the changing winds guarantee that each visit is unlike any other. Its so pristine, you end up regreting the footprints you leave. Take it slow on your way back down or bring a plastic sheet for an exhilarating slide.

[content] => This four-mile stretch of beach is the most famous of Vietnam's 'R&R' playgrounds. Nha Trang town actually looks like a seaside resort, with a long breezy marine drive dotted with palm trees, lively restaurants and tourist shops. The region is blessed with deep, warm waters all year round and is surrounded by archipelagos, islands, mountains and white sand beaches which ensures it is a an attractive resort for most of the year. The magnificent coral sea bed also makes it ideal for scuba diving and snorkelling.
It was not too long ago that Nha Trang was a sleepy fishing town with a gentle rhythm - a handful of decaying, low-rise state-run hotels and some of the country's best fresh seafood. Nowadays, it is significantly more built up and it has no shortage of great restaurants and the nightlife options are plentiful. However, most of the best resorts are well out of town, all of which are gloriously isolated and tranquil. Nha Trang's central beach, on the other hand, will not permit any hotels to build directly on to the sands and it, therefore, retains a community feel. In the very early morning, you will find it to be a hive of activity as the locals take a pre-breakfast swim, practice Tai Chi, play badminton, or kick a football around. However, come 9 a.m the sand clears for the remainder of the day.
One of the best ways to enjoy Nha Trang is on a day cruise to the nearby islands for snorkelling and a BBQ. Or for those wishing to escape the beach, the nearby 9th century Po Nagar Cham Towers are certainly worth a visit, as is the nine-metre high Buddha, set on a hillside overlooking the town.

[content] => This large chunk of Vietnam is often overlooked by travellers. However for those with the time and inclination to explore the remote mountainous central region are rewarded with fascinating indigenous cultures, cooler temperatures, beautiful lakes and one of the best off-the-beaten-track experiences Vietnam has to offer. The infrastructure is less developed, the restaurants are 'local', spoken-English is sporadic and the accommodation largely basic, though with some fantastic new additions including the excellent Lak Lake Tented Camp.
You are likely to either start or finish travels in the Central Highlands in Dalat. Heading north, the first significant staging post is Buon Ma Thout, famous as the "capital of coffee". From here, visitors usually head to the tiny town of Lac Thien to spend the night beside beautiful Lak Lake, perhaps having dinner in a traditional long house. A day's activities could include a visit to Bao Dai's villa, a castle owned by the last Emperor of the Nguyen dynasty, a stop at Jun Village to find out about the customs and culture of the Ede minority and a visit to M'lieng village, from where it is possible to take a dugout canoe across the lake.
Continuing your journey north, Pleiku is the regional capital and is inhabited primarily by the Bahnar and Jarai ethnic groups - 'montagnards' as they were known in Colonial times. The town sits at an elevation of 800m above sea level and these days acts as the gateway for those wishing to go to explore Kon Tum.

[content] => You find yourself passing mile upon mile of pristine, undeveloped white sand on the expansive coastline surrounding this former fishing village - now a brashly modern town. Quy Nhon has only recently been made worthwhile for international visitors due to a couple of nearby first class beach hotels. The town itself sits on an attractive bay with a long promenade and a magnificent beach that locals pour onto to cool off on hot summer evenings. Whereas there is little to hold your attention for long, the seafood restaurants along the beachfront are well worth a visit.
The town's relative obscurity belies its important role in Vietnam's history. It is the capital of Binh Dinh province, which was for centuries the centre of the Cham civilisation. The richest collection of Cham towers, the main architectural remnants of the kingdom anywhere, are found around the town and the small Binh Dinh provincial museum displays a surprisingly good display of Cham artefacts.
Lying conveniently between Hoi An and Nha Trang, Quy Nhon makes for the ideal stop on an overland journey through Vietnam or, alternatively, the town can be reached via a short flight from Saigon.

[content] => This is Asia's most spectacular and evocative seascape. The Halong Bay & Lan Ha Bay Cruises are a must-do on any Vietnam holiday. Ignore anyone telling you to avoid them due to the crowds - they either haven't been or didn't go on the right boat. We have been returning to the bay year after year and the authorities are trying to clear up the waters and keep large crowds of boats away from each other. There is also a threat that in the next few years cruising on the bay overnight will be stopped, therefore now is definitely the time to go!
Steeped in myth, 'Ha Long' translates as 'descending dragon' and legend holds that the islets were created by a dragon's lashing tail. In fact Halong Bay was formed as a result of millions of years of erosion on the limestone rocks and when the last ice age finished the seas rose as the glaciers melted, flooding the entire area and transforming the peaks into the islands we see today. There are nearly 3,000 of these limestone karsts and islands of various sizes and shapes, covering an area in excess of 600 square miles. Because of their precipitous nature, most are uninhabited and untouched by man, hiding peculiar grottos and caves often with huge chambers and strange rock formations. The surrounding turquoise waters play host to a great diversity of ecosystems including offshore coral reefs, freshwater swamp forests, mangrove forests, small freshwater lakes and sandy beaches. Whole families live in easily visited floating villages.
The newly opened highway linking Hai Phong to Hanoi allows a shorter 2 hour transfer from the city and gives access to some of our favourite cruises around Lan Ha Bay and Cat Ba Island. This area is far quieter than Ha Long Bay and also features some of the best boats on offer. Speak to one of our consultants for the current offerings as we also get some fantastic specials throughout the year.
We strongly advise that you avoid trying to make this into a day tour - a ferociously early start and 7 hours on the road isn't an ideal way to spend your holiday time. A better way to appreciate this magical scene is by overnight boat, making for a more leisurely cruise amongst these karst cliffs. The best boats are very comfortable and professionally operated - the worst provide mediocre and often unsafe conditions for budget travellers.
In good weather (best months are from October to March), an overnight cruise on Halong Bay is an unforgettable experience. Sunset on the bay is a delight and the early morning mist is timelessly atmospheric.

[content] => Hue is Vietnams' most culturally and historically significant city – a deposed but once glorious capital which lost its sovereignty, saw its prestige melt away and then found itself brutalised on the frontline of modern warfare. Yet for all the gravitas of history, contemporary Hue is now a modest regional centre – merely Vietnams' 6th ranking city and struggling for to find a new-found sense of purpose.
Hue's complex history's most significant period was as Vietnam's Imperial City, built in 1803 by Gia Long on a former royal site. Hue then remained Vietnam's capital until 1945, when Bao Dai, the last of the Nguyen emperors, abdicated from the throne. These Emperors modeled their capital on the Forbidden City in Beijing, but unfortunately Vietnam's imperial palaces have not fared well over the years. The ruins of the Citadel are on the banks of the Perfume River, with many of the city walls battle scarred from fighting with the French as far back as 1873 and later with the Americans during the notorious 'Battle of Hue' in 1968.
Upriver are the beautiful tombs of rather ostentatious, megalomaniac past Emperors, each of which designed to reflect each Emperor's personality and hopes for the afterlife. These are often extravagant complexes of pavilions, temples, courtyards and lakes. A peaceful boat ride down the Perfume River brings you to the most famous of these tombs: the imposing Minh Mang Tomb and the serene Tu Duc Tomb. About an hour and a half from Hue is Lang Co,whose beach shimmers in iridescent blues, whites and greens. The totally remote 'Laguna' development is at the end of the peninsula and consists of 2 world-class international resorts and a 18-hole, championship course designed by Sir Nick Faldo.

[content] => Quang Binh Province boasts an incredibly diverse mix of natural attractions with stunning, deeply forested karst scenery, some of the most beautiful and magnificent caves and simply stunning, deserted beaches. Many are now turning their attention to this region, as it has become Vietnam's most talked about emerging destination. History has been less kind to the people of the province – long impoverished and battle-hardened.
The numerous cave systems at Phong Nha date back at least 20 million years and are now a UNESCO world heritage site. The translation of Phong Nha is 'winds fangs', an allusion to the dramatic stalagmites found in the underground grottos and river systems. It's the sheer scale of the system which overwhelms – the whole complex is some 40 miles long, stretching towards the Lao border. The main cavern takes you the first 5 miles, but explorers have thus far penetrated a further 22 miles in to the cave system and there are surely mysteries of Phong Nha yet to be revealed. Caverns in the cave were once held sacred by the Cham and several walls still bear inscriptions carved out many centuries ago. Son Doong Cave is near the Laos-Vietnam border and, according to Limbert Deb who discovered it, this cave is five times larger than Phong Nha Cave. Ke Bang Park, in which both the cave systems sit, is spectacular - dense forest, limestone karsts and plunging rivers. Day trippers can just about explore the region from Hue, but its a very long day. Better to spend the night in Dong Ha, the main town on the coast.

[content] => In an often-misty mountainscape, close to the Chinese border, is Sapa. Vietnam's highest peak looms over the town, 10,000 foot Mount Fansipan, surrounded by blazingly green valleys, terraced rice paddies and fast-flowing streams pouring over innumerable waterfalls.
Sapa is reached via a winding 25 mile road from Lao Cai and the ride up offers a taste of what is to come, driving through lush valleys and passing several minority villages along the way.
In the early 20th century the French took advantage of the town's cool climate, developing what was a military outpost in to a summer retreat. Today, Sapa retains its European feel, largely due to an impressive collection of French villas and bountiful gardens. But Sapa's newfound popularity is largely due to the colourful ethnic population who live in the surrounding valleys. This is home to many of Vietnam's 54 minority groups, each with their own distinctive dress, customs and dialects.
Many different hill tribes congregate at the bustling weekend market in Sapa to trade with one another. Treks to visit surrounding villages are possible, from easy day walks passing through terraced paddy fields to reach mainly Black H'Muong and Dzao minority villages, where traditional and ancient beliefs still hold sway. More extended adventures are also possible, some running over many days and include nights spent in local homestays. You can choose your adventure level and duration although, many spectacular spots can be easily accessed by car also.
But the north west is not just about Sapa. Dien Bien Phu is one of Vietnam's best kept travel secrets - especially for the budding historian. It was here in 1954 that Ho Chi Minh's forces defeated the French in a battle that ended almost a century of colonial rule and sent shockwaves through the developed world. And there's much more than war history here too. The valley at Dien Bien Phu is spectacularly beautiful and the surrounding mountains are dotted with friendly Thai minority villages.

[content] => The Tam Diep Mountain Range separates northern and central Vietnam and in this region you also find the vast Red River Delta and Ninh Binh. Think picture-postcard-perfect rice paddy fields, with gentle streams meandering through ancient caves. Many travel brochures describe the area as "Halong Bay on land" as the huge limestone karst monoliths are the dominant feature. But its not just (arguably) the most beautiful landscapes in Vietnam, as the region also has plenty of historic sites, most notably Hoa Lu which was once the capital of Vietnam. Phat Diem, a centuries old flourishing Catholic enclave and home to Vietnam's most interesting Catholic Cathedral is also worth a visit.
Cuc Phoung National Park is Vietnam's largest nature reserve and inhabitants include 97 species of mammals. It is one of the few remaining tropical rain forests left in the country. They have an interesting Visitors Centre and excellent Endangered Primate Rescue Centre which homes species like the Delacour's Langur, Golden-headed Langur, Tonkin Snub-nosed Langur and the Black Crested Gibbon. Nearby is the Van Long Nature Reserve, best explored by sampan.
Day trips from Hanoi to Ninh Binh are popular but are a very poor second to spending a couple of nights here - exploring Ninh Binh in your own time and out of sync with the day tripping masses will do far more justice to this spectacular region

[content] => The Mai Chau Valley provides an alternative for travellers who don't have time to make it all the way up to Sapa yet are keen to experience rural Northern Vietnam, where hill tribe culture dominates. The White Thai, the most prevalent local group, nowadays adopt dress similar to the Vietnamese but they retain their cultural uniqueness - you'll certainly notice their distinct personal style. There are several other minority groups including H'Muong, Dzao and Tay inhabiting the region's picturesque valleys, rolling hills, shimmering paddy fields and bustling villages. The Sunday market brings a lot of people from the surrounding countryside into Mai Chau itself.
Just 80 miles south west of the capital – a 4 hour drive - the region offers some excellent trekking and easy cycling. It really is an idyllic valley and it's a shame that many travellers only come here for a day trip. Spending a night here, or even longer, is recommended, particularly for those who packed their walking boots. The genuinely warm welcome is a highlight for those visiting out-lying villages, with family meals served to guests by hill tribe families. The region is famous for handicrafts, inparticular embroidered clothing.
The town also serves as a convenient staging post for those travelling overland into Vietnam from Laos (or vice versa).
In general Mai Chau enjoys decent weather throughout the year - it rains less and humidity is lower than other Northern Vietnamese cites.

[content] => Vietnam's capital can lay claim to being Indochina's most charismatic and captivating city. It is a hotchpotch of tangled streets in the Old Quarter. It is a modern 21st Century megapolis in the Western districts. There are French-era colonial relics on tree-lined boulevards, painted in muted hues of mustard and white. It is considered as a great place in which to live, due to it being one of Asia's greenest cities with an abundance of parks and lakes. It has a vibrant café and gallery focussedcultured lifestyle.
Hanoi is a city of rich history and the source of much of Vietnam's literature, music and poetry. Emperor Ly Thai To founded the city in 1010 and very soon after this some of the city's oldest remaining structures were built, including 'One Pillar Pagoda' and the 'Temple of Literature' - one of the oldest universities in the world. From 1902 the city served as the capital of French Indochina and many of the old boulevards and residences from this period have survived, many used today to house Government institutions and Foreign Embassies. In 1945, Ho Chi Minh proclaimed in his independence speech that Hanoi would henceforth be the capital of Vietnam.
Today, Hanoi is an energetic city of nearly 7 million people and it retains its Old Quarter - a congested square kilometre where the streets are named by what is sold. These 36 Streets were closed behind massive ramparts and heavy wooden gates until well into the 19th-century and Hanoi's daily life still unfolds on these busy, cramped roads.
Hanoi is home to an impressive food culture. The best approach is to miss breakfast, forget your map and simply bring your camera – then get deliberately lost in the human landscape, eating as you walk.
Few places are as rich in history and character - Hanoi retains a mysterious quality and is diverse enough to hold your interest for at least a couple days of exploration.

[content] => Being at an elevation of 1,500 metres offers welcome respite from the heat and humidity. The city was founded with this purpose solely in mind by the French colonial administration in 1912. Once upon a time Dalat was optimistically referred to as 'Le Petit Paris', due to many spectacular chalet style lodges that sprung up around the town during this period. Several remain, as does some of the charm, but its fair to say that a rising population has led to chaotic building, compounded by poor renovation of many heritage buildings. However, take in to consideration the stunning backdrop of forests, waterfalls and lakes and Dalat becomes worth a few days in your itinerary.
"Listening to the noon going down in the romantic town, a Da Lat violet is filled with fog..." is a line from a very famous Vietnamese song, written by Minh Ky Da Cam. The vast majority of visitors to Dalat are Vietnamese honeymooners, drawn by the vivid blue skies, cool fresh air, flower-filled parks, and local cuisine. Watching the young, loved-up couples becomes an absorbing pastime.
Dalat's high altitude and fertile landscape make it one of Vietnam's premium agricultural areas, producing a variety of fruits, vegetables and flowers that do not grow in the lowlands. In markets as far north as Hanoi, vegetables and flower vendors will tout their "made in Dalat" produce.
In 1978, the south and north Cat Tien parks (a short way south of Dalat) were put under the State's protection and then in 1992, Cat Loc park was also listed in a joint program to protect the environment. Eventually, in 1998, these three parks joined together to become the Cat Tien National Park. It is now the most important reserve in Vietnam, home to a wealth of flora, as well as much of the country's endangered wildlife. Amongst the species that live in the 70,000-hectare park are the Asian elephants, yellow-cheeked gibbons and sun bears. Most visitors will visit the park's Endangered Primate Centre, where you'll be able to see two of the rarest species in the world - the Delacour and Cat Ba langurs. Cat Tien National Park has a diverse topography encompassing rolling hills, flat plains, dense forest and meandering rivers.

Vietnam is amazingly diverse. It is a country with a remarkable history, a rich culture, wonderful cuisine (the best in South-East Asia?), montagnard tribes and striking landscapes. It is made up of dramatic limestone karsts, terraced paddy fields, lush rain-forests, stunning beaches, high mountains and flat river deltas. It was the backpackers’ best-kept secret in the 1990’s and has now risen to become a travellers’ nirvana in the 21st Century. Vietnam has effortlessly embraced ‘luxury’, without losing any of its authenticity – a holiday in Indochina is as stress-free as it is rewarding, the proficient infrastructure and an inherent Indochinese ‘style’ ensuring happy travels.
Welcome to a country with over 2,000 miles of coastline and several different weather systems. Because of this, there really isn’t a “perfect” time to visit Vietnam, you’re likely to experience a mix of sunshine, clear blue skies and a bit of rain whenever you go.
It’s worth thinking about the climate when planning your itinerary, especially depending on where you’ll be spending most of your time. But don’t get too caught up in strict ideas of “high” or “low” season. While one region might be having showers, another can be basking in sunshine. Sometimes the so-called “high season” can actually bring more unpredictable weather to certain areas, leaving locals scratching their heads.
Vietnam’s long, thin shape means there’s huge variation across the country. There can be snow in the northern mountains while the beaches are enjoying tropical heat at 32 °C.
The most popular time to visit is from November to April, when the weather is generally at its best and you’ll find the biggest crowds. The months on either side, October and May, can also be fantastic. October might still have the odd storm, and May starts to get hotter and wetter, but both are great times to explore with fewer visitors.
Many travellers love visiting during the hot and wet months of June to September. The rice paddies glow green, the beaches are beautiful, and dramatic afternoon storms put on quite a show. You might lose a day or two to rain, but a bit of enforced downtime can be a nice chance to slow down. You’ll also find fewer international tourists, though domestic travel is becoming more popular during these summer months.
Thai food may be the most famous of all the South-East Asian cuisines, but true ‘foodies’ would rather go for Vietnamese every time. Quite rightly so. Vietnamese food is light, subtler in flavour and dishes are often boiled or steamed rather than stir-fried. An importance is placed on herbs and seasoning – no surprise in this land of diverse climates.
In the south, curries and spices often feature, while other regions have evolved their own array of specialities. Outside influences abound, as Buddhism introduced a vegetarian tradition to Vietnam, while much later the French brought with them bread, dairy products, pastries and the whole café culture.
Though it originated in Hanoi, a dish you’ll find throughout Vietnam is pho (pronounced as “fur”), a noodle soup eaten primarily at breakfast. A basic bowl of pho consists of a light beef broth, flavoured with ginger, coriander and sometimes cinnamon, to which broad, flat rice-noodles, spring onions and slivers of chicken, pork or beef are added. At the table you add a squeeze of lime and a sprinkling of chilli flakes or a spoonful of chilli sauce.
With its diverse climate, Vietnam is blessed with both tropical and temperate fruits, including dozens of types of banana. The most prolific orchards are in the south, where pineapple, coconut, papaya, mango, longan and mangosteen flourish. Dalat is justly famous for its strawberries, while the region around Nha Trang produces delicious dragon fruit – the size and shape of a small pineapple, the dragon fruit has a pink skin, studded with small protuberances, and smooth, white flesh speckled with tiny black seeds. The slightly sweet, watery flesh is thirst quenching and, indeed, often served as a drink, crushed with ice.
A fruit that is definitely an acquired taste is the durian – a spiky, yellow-green football-sized fruit with an unmistakably pungent odour reminiscent of mature cheese. It does not taste as it smells, once described by a friend as ‘onion-laced custard’. Jackfruit looks worryingly similar to durian but is larger and has smaller spikes…and tastes a lot better.
A relative newcomer on the culinary scene is French bread, which the Vietnamese truly understand. It is made with wheat flour in the north and rice flour in the south. Baguettes – sometimes sold warm from street side stoves – are sliced open and stuffed with whatever you fancy.
Vietnam’s premium drink is green tea, which is the accompaniment to every social gathering or business meeting and frequently drunk after meals. For those who prefer their drinks with significantly more kick, there’s also rice wine. Some of the local beers are excellent, and an increasingly wide range of imported wines and spirits are available.
The Vietnamese eat early: outside the major cities food stalls and street kitchens rarely stay open beyond 8pm and may close even earlier. In Hanoi & Saigon you can eat at most times of day and night. Markets are often good snacking grounds, with stalls churning out soups and spring rolls or selling intriguing banana-leaf parcels of pate, pickled pork sausage or perhaps a cake of sticky rice. The quality and variety of food is generally better in the main towns and cities then in the countryside, where restaurants can sometimes be hard to find. But you’ll never go hungry; there’s always some stall selling a noodle soup or rice platter and plenty of fruit to fill up on.
You can fly direct to Vietnam with Vietnam Airlines to Hanoi or Saigon, however these direct flights don’t run daily so you do need to be flexible on dates to get the best deals. For other flights, the best options to Vietnam take you through Bangkok (Thai Airways, EVA Air or BA), Kuala Lumpur (Malaysian Airways), Singapore (Singapore Airlines) or Hong Kong (Cathay Pacific). It is possible to break the journey in these places, perhaps adding on a city or beach break in Thailand or Malaysia, or a city break in Singapore or Hong Kong.
A host of other airlines, European and Middle Eastern, fly to South-East Asia via their respective hubs, but rarely are these cheaper or more convenient. However, some do offer more options for those travelling from regional UK airports.

British Passport holders can enter Vietnam for a single entry of up to 45 days with a visa exemption. A minimum of 6 months validity is required on your passport from the date of departure from Vietnam.
For stays over 45 days, or multiple entries, a visa will be required to enter Vietnam on a British Passport. For other types of passport, please check with the local Vietnamese embassy. There are three options available to obtain your visa, if required:
1) Electronic Visa – British passport holders can now enter Vietnam using an e-visa for single or multiple entry, of up to 90 days. The application can be made online at https://evisa.xuatnhapcanh.gov.vn/.
2) Apply for a visa in advance of travel from a Vietnamese Embassy/Consulate in your home country – this is the option required where a visa-on-arrival is not available.
3) Holiday Architects can arrange a “Visa-on-Arrival” authorisation for you – A good option for those who are unable to send their passports or visit the consulate in advance of travel, or who have made last-minute arrangements. No charge is made by Holiday Architects to arrange the visa on arrival, but the visa fee will be required locally on arrival at the airport.
As we’re not medical experts we feel it is essential you contact your GP regarding vaccinations and the like for travel to Vietnam. In addition to such vaccinations as you’d routinely have for living in the UK, further boosters are recommended for Hepatitis A, Typhoid, Polio and Tetanus. If you have visited a country where Yellow Fever is endemic, you will need a certificate of vaccination.

Malaria is present in some rural areas at certain times of the year.
Comfortable, lightweight clothing in natural fabrics such as cotton is most suitable for travelling in Vietnam. The dress code is fairly casual as in most parts of the tropics but it is advisable to cover arms and legs in the evenings against biting insects. A lightweight raincoat and umbrella are a good idea in the rainy season and an umbrella can also offer useful shade from the sun.
Evenings in the north and the centre can be quite chilly, so bring a sweater and a good jacket especially if you're visiting between November and February. Visitors shouldn't wear shorts, short skirts or other revealing clothing when visiting pagodas and monasteries. Shoes must be removed before entering some religious building or a private home. For that reason, we'd recommend packing shoes without too many laces which can easily be taken off and on!
Vietnamese etiquette is easy to fall in line with. Smile a lot. Don’t point. Don’t ever raise your voice – getting visibly angry with people will prove to be totally counter-productive. If you have a problem, remain calm and become increasingly polite – and you will be helped.

A number of the countries in which we operate holidays are religious societies with a widely observed set of customs. Always respect these norms, particularly when visiting religious buildings.
To the best of our knowledge, all hotels, lodges, and camps within our portfolio operate stringent measures to minimise water usage. All of our destinations have issues with water supplies to a certain extent, so feel free to raise any possible wastage should you encounter it during your stay, either with the accommodation or with us upon your return.
Please ask permission before taking photographs of people, and respect their wishes if they are not happy to be photographed. We find that friendly requests and a smile are usually met with a ‘yes!’
Strive, where possible, to make your own contribution to environmental practices as you travel. This might include minimising your electricity usage, not smoking in protected areas, avoiding coral while snorkelling, and safely disposing of all litter (recycling where possible).
Where possible, try to purchase from local suppliers. This includes shopping for souvenirs, dining out at restaurants, and booking additional excursions during your free time. In areas where haggling is an accepted part of daily life, don’t be offended if you’re unable to obtain what you perceive as a fair price for an item.
We emphasise to local suppliers that our clients should never be taken on unsolicited shopping trips, but if this does happen, try to retain your sense of humour, provide a firm refusal to participate and do let us know about it on your return. We pass on all feedback from every trip undertaken with us to our relevant local suppliers, who all share our commitment to travelling with sensitivity.
Please don’t remove any indigenous items from their natural habitat and attempt to bring them home as a souvenir. This particularly applies to everything from coral, shells, plants and food in the natural world, to cultural artefacts and antiques.
