Dornier Estate can be found on the outskirts of Stellenbosch, on the lower slopes of the mountains that guard the town. After bumping up a dirt road towards the Cape Dutch farmstead that houses the restaurant, the last thing you expect to see is the dramatic and unashamedly modern curving rooftop of the winery, reflected in the still waters of a vast koi pond, built over the maturation cellar to help regulate the temperature in there. The wines made here are bold and modern, like the architecture, and it’s great to sit in the wonderful Bodega restaurant looking over the pond and that amazing roof, sipping some of the wine and taking it all in.
